TEAM Eats: Espinacas Con Garbanzos

This month, our TEAM Eats dish comes all the way from Spain! TEAM missionaries Sharon and Carey Owens love the Spanish tradition of going out for tapas. Tapas are delicious food served on small plates, like an appetizer. One of the Owens’ favorites is espinacas con garbanzos, a chickpea and spinach dish. 

Sharon says this is the perfect hot dish for a cold winter day. It’s great alone or with crackers or a baguette! 

“We love it in the winter months when it’s chilly. Sort of like a different type of chili. Delicious! Warms you up from the inside out,” Sharon says. 

But being a missionary in Spain is more than just enjoying yummy foods. According to The Joshua Project, only 1.6% of the country is evangelical Christian, and 1,008,000 people here are considered unreached. That means there are over 1 million people in Spain alone that have yet to hear the Good News about Jesus.

So, as you try out this recipe for yourself, take some time to pray for the country of Spain. Pray for the missionaries there to build strong relationships that open the doors to sharing the Gospel. And pray that the people in the country will be open to hearing the Gospel.

Now, here’s how to make Espinacas con garbanzos!

Preparation time: 10 min
Cooking time 15 min
4 servings

Ingredients:

  • Olive oil for sauteing
  • 6 cloves garlic
  • ½ large onion
  • 3 tablespoons sweet paprika
  • 3 teaspoons cumin
  • 1 cup of spinach (fresh or frozen)
  • 1½ cup chicken broth (or white wine or water)
  • 3 cups cooked and rinsed chickpeas or garbanzo beans

 

Instructions:

  1. Sauté garlic, onion and spinach in a large frying pan. 
  2. Add paprika, cumin, and salt to taste. 
  3. Add liquid and chickpeas.
  4. Simmer for 15 min and serve in a bowl

 

Bonus tip: Serve with a fresh baguette and some slices of sharp cheese.
